The Saracen's Head—on the right of this picture—was a famous coaching inn at Great Dunmow, a town associated since 1949 with the Dunmow Flitch ceremony.This had originated at Little Dunmow in 1140 and fallen into neglect in 1751. Every four years a side of bacon (a flitch) is presented to a married couple who can prove that they have not regretted their marriage a year and a day after the ceremony.
