More about this scene
Because the difficult alkaline downland soil yielded indifferent crops, for centuries the South Downs were vast sheepwalks; by the 18th century there were 400,000 ewes grazing between Eastbourne and Hampshire. A shortwool Southdown breed had been developed, whose meat, lightly flavoured by wild thyme, was the most delicious of all muttons.
